Figuring this diet out…I hope!

I’m learning more and more about this diet. It’s basically all about eating clean! At first, I thought this diet was a no carb, no sugar diet and that just seemed ridiculous. But I have come to understand that because I am insulin resistant my body cannot process well a bunch of complex carbs all at once. So I’ve basically cut out all sweets and am eating food with low sugar or no sugar. When we go back to the doctor next week, I will tell him what I have learned and what I am doing and hopefully he will tell me I am doing right!
My family has been a tremendous help in learning this diet and helping me find food I can eat. I know Dave is the best husband in the world, but he sure has been going beyond even the best husband category this week with this new diet of mine. He’s an expert at knowing what foods I can and cannot eat. All I have to do is ask him. He is so dedicated to cooking (he’s the cook in our household) food that I can eat. And this morning he woke up and before leaving for work he made me breakfast! And then he even cleaned up the dishes (that’s usually my job, since he does the cooking)!
My mom and mother-in-law, Debbie, have also made it a priority to fix meals that they know I can eat. And since we eat a meal at least once a week at our parents’ houses that’s important! Last night my mom made me mashed potatoes out of cauliflower since I can’t have real mashed potatoes. They were good, but I think I was the only one at the table who really liked them. But, then again, I guess if I liked them that was all that really mattered!
So this diet has turned out to be not so bad after all. I just hope I get an A+ from Dr. L next week and he doesn’t tell me I am eating something I shouldn’t be eating…
